CHIMMICHUNGAS

Oh kay, I tried this chimmichungas and its very tasty. Tastes different. Not what we used to eating every day. And I made it into a wrap instead of a deep fried savoury. I made my own tortillas, which came out perfectly soft, not to much baking powder and fried it like a roti in a tawa pan with ghee. Here goes......

You'll need:

500gr mince
1 onion chopped
1/4 cup olive oil
1/2 green pepper sliced
1/2 red pepper sliced
1 tomato chopped
2 green chillis chopped
6 mushrooms sliced
1tbs crushed garlic
1 tbs dhana jeeru
Salt to taste, 1/2 tbs
3tbs basil pesto, ina paarmans,
3tbs parmesan cheese, its dried, smells wack but tastes good
Or you can use the robertsons pesto&parmesan spice (already mixed together)
1 tin bakebeans, koo of course

Fry the mince and the onions in the olive oil until the mince is cooked. Add the garlic, green chillis, dhana jeeru, salt, pesto and parmesan. Fry till all the spices are absorbed. Add the peppers, mushrooms and tomatoes. Mix well together. Lastly add the bakebeans and simmer with a lid on the pot for 15minutes. And your filling is done.

Tortillas

4 cups cake flour
2tsp salt
2tsp baking powder
2tbs ghee in 1&half cups warm water

Make a soft dough.

Makes 10 balls. Roll out and fry like rotis. Must be rolled out paper thin. Fry in a tawa pan using a tbs ghee to fry each tortilla.

Fill the tortillas while hot.

GARLIC BUTTER

Why buy when you can make your own. Fresher is better. Tastes delicious on toast, french loaf, naan, on a cheese sandwich, on just about anything, be inventive......

Ingredients

250gr mooiriver butter
2tsps chopped garlic
1tbs mayonnaise cross&blackwell
1tbs lemon juice
1tsp chopped or dried parsley

Place all the ingredients in a bowl. Make sure the butter is soft. Beat together with a fork. Store in containers with lids. Freezable as well. Enjoy

TASTY CHILLI GARLIC SAUCE

This spicy not hot chilli garlic sauce taste great with chips, eggs, samoosas, salad rolls, sandwiches, on just about anything. Its much more economical to make considering the prices of sauce today especially if your kids finish a bottle in less than a week.

Ingredients:

1/4 cup olive oil
1/2 cup curry leaves
1/2 tsp sesame seeds
1/2 tsp mustard seeds
8 cloves of garlic chopped fine
2 tbs vinegar
6 tbs achaar masala
1 bottle tomato sauce, I always use All gold.

Method:

Heat the oil in a deep pot. Add curry leaves, sesame seeds, mustard seeds, chopped garlic and achaar masala. Do not burn the oil or the seeds. Heat until you get the smell of the curry leaves. Lower the heat and add the tomato sauce and vinegar. Stir occasionally while cooking until all the oil is absorbed into the tomato sauce. Leave to cool, bottle and refrigerate.

As easy as that. ENJOY....

CHOCOLATE BROWNIES


One of my favorite favorites to eat is chocolate brownies. And they so easy to make, who would have ever thought. Well I always thought it was a job and half until I tried it myself.
It really tastes great chopped up on vanilla, chocolate or chocolate fudge ice cream or just something delicious to nibble on. Try it, you'll be amazed!

Ingredients:

350ml castor sugar
4 eggs
250gr butter
2 tbs cocoa
2 tbs cake flour
250gr melted chocolate, I always use cadbury's.
1/2 cup chopped pecan nuts
1 box, 200gr, romany creams broken into chunks

Method

Beat eggs and sugar until creamy. Add melted butter to egg mixture and beat well. Sieve the cocoa and the flour and add to the egg mixture. Lastly add the melted chocolate, the chopped nuts and broken biscuits. Mix well to combine. Grease a 20cm baking tin and put the mixture in the tin. Bake in a preheated oven for 40minutes. Allow to cool before cutting in squares. Dust the top with icing sugar. ENJOY....

SPICY CHICKEN WRAPS

Chicken wraps are quick and easy meals to make yet tastes great, not too spicy, not too bland and the filling can be eaten in a pitta bread as well. Try it on a hotdog roll as lunch for hubby or the kids for school. The chicken can also be precooked and stored in the fridge or freezer for those who are always on the go. I prefer freshly cooked and eaten.

The Wraps

4 cups cake flour
1level tbs salt
1/4 cup olive oil
Warm water, hotter than lukewarm, to make a soft, not wet, but pliable dough.

Make the size balls you require. Roll out into circles, fry in a hot pan using a tbs of ghee on each.

The Chicken

1 kg chicken fillet cut into strips
1 onion sliced
1 tbs masala
1 tbs dhana jeeru
1 tsp ground garlic
1/2 cup tikka/prego/chilli garlic sauce
3 tbs maggi worster sauce
1 punnet sliced mushrooms
4 tbs olive oil

Fry all the ingredients together until the chicken is done. Donot cook till dry but donot add water.

Dahi

250ml inkomaas/yogurt
1 green chilli
1 clove garlic
1/2 cup green dhania

Liquidize all the above together.

Have some lettuce and cucumber slices as well to put into the wrap. Thinly sliced red peppers, my all time favorite.

The Wrapping

on the open wrap place a line of chicken, then lettuce, cucumber, few slices of red pepper and 2 tbs of dahi. Roll up an there u have your mouth watering wrap.

When using the chicken filling in a pitta, the dahi can be substituted with home made chilli garlic sauce and add a few blocks of avo for great tasting flavor. ENJOY....

CREAMY CHEEZY LASAGNE



Making lasagne is a process and much time is needed to prepare. There is no easy way out of this one but the taste is worth the hard work and the wait.

Filling:
1 kg chicken cubed
3 tbs olive oil
1 chopped onion
1 chopped green pepper
1 punnet sliced mushrooms
1/2 cup prego/tikka sauce
1 tbs masala
1 tsp dhana jeeru
1 tsp freshly chopped garlic
Salt as needed

Cook all the above ingredients together, not too dry but not soggy either.

White sauce:

60gr margarine
1litre milk
4 tbs cake flour
Salt and pepper as needed

Melt the margarine in a pot on a low heated stove. Add the salt, pepper and flour and mix well. Pour the milk in a 1/4 at a time, using an egg wisk to avoid lumps. Cook until all the milk is used up and the sauce is a nice, smooth, thick consistency.

1 box lasagne sheets
Cheddar cheese
Origanum for garnish

Normally, every one lay the lasagne sheets in water before they use it. - don't. I like the sheets original flavor and besides I don't like the sheets soggy.

So now its time to do the layering.
Grease the oven pan with margarine generously. Layer the white sauce, the lasagne sheets, the chicken filling. Repeat the process ending with the white sauce. Grate the cheese on the top. Sprinkle with origanum. Cover with foil. Leave to stand for 30 minutes.

Bake in preheated 180 degrees oven for 30 minutes. Leave to cool for 20 minutes. ENJOY the flavor .....

CHEEZYLICIOUS CHEESE SPREAD

One of my most favorite foods to eat is any thing made with cheese. Did you ever wonder how they make melrose, well I have wondered for years until I found out how to make my own. Here's a tried & tested recipe for you.

Cheese Spread

125 gr margarine, not low fat
250 ml milk
500 gr berg process cheese

Melt the margarine in the milk on low heat on the stove. Add the grated cheese to the margarine and milk mixture. Stir until all the cheese has dissolved and you left with a smooth mixture. Store in containers. Freezerble as well. ENJOY....
