CHIMMICHUNGAS

Oh kay, I tried this chimmichungas and its very tasty. Tastes different. Not what we used to eating every day. And I made it into a wrap instead of a deep fried savoury. I made my own tortillas, which came out perfectly soft, not to much baking powder and fried it like a roti in a tawa pan with ghee. Here goes......

You'll need:

500gr mince
1 onion chopped
1/4 cup olive oil
1/2 green pepper sliced
1/2 red pepper sliced
1 tomato chopped
2 green chillis chopped
6 mushrooms sliced
1tbs crushed garlic
1 tbs dhana jeeru
Salt to taste, 1/2 tbs
3tbs basil pesto, ina paarmans,
3tbs parmesan cheese, its dried, smells wack but tastes good
Or you can use the robertsons pesto&parmesan spice (already mixed together)
1 tin bakebeans, koo of course

Fry the mince and the onions in the olive oil until the mince is cooked. Add the garlic, green chillis, dhana jeeru, salt, pesto and parmesan. Fry till all the spices are absorbed. Add the peppers, mushrooms and tomatoes. Mix well together. Lastly add the bakebeans and simmer with a lid on the pot for 15minutes. And your filling is done.

Tortillas

4 cups cake flour
2tsp salt
2tsp baking powder
2tbs ghee in 1&half cups warm water

Make a soft dough.

Makes 10 balls. Roll out and fry like rotis. Must be rolled out paper thin. Fry in a tawa pan using a tbs ghee to fry each tortilla.

Fill the tortillas while hot.
